Mee goreng Basah...

Did this the other day.. Just using whatever there is inside the fridge...so selamat menjamu mata..hehe [^_^]

Cakoi @ Pak Tongko

This is one of my favourite thingy everytime I go to the Pasar Malam..
I've so many times ... last time I mmg slalu buat coz my daughter suka makan. She's a very picky eater so I have to make dishes that she likes..

this was made like ages ago.. haha ;)


So today I've made my mind to try making it again after sooooooo long.
I've made some alteration to the recipe that I used to make. Simply to improve the texture.. Love how they had turned out. So lembut and fluffy. Hoorayy! [^_^]

For those who wanted to try... here is the recipe and instruction:

Ingredients:
  • High protein flour - 200gm
  • Plain flour - 50gm
  • Sugar - 2 tablespoon
  • Baking Soda - 1/2 teaspoon
  • Salt  - 1/2 teaspoon
  • Yeast - 1 teaspoon
  • Butter/oil - 2 tablespoon
  • Egg - 1
  • Air suam - 100ml
Method:
  1. Pecahkan telur dlm mangkuk dan masukkan 2 sudu besar air suam. Kacau.
  2. Masukkan semua bahan-bahan kering dalam satu bekas kacau rata dengan jari.
  3. Apabila dah sebati, masukkan telur. Uli sehingga tak melekat di tangan.
  4. Perap dalam bekas dengan tuala basah atau cling film dan dibiar naik 2 kali ganda lebeh kurang 40 mins -sejam
  5. Bila dah naik 2 kali ganda tumbuk2 biar keluar angin dan dibiarkan naik sekali lagi.
  6. Siap bole digunakan.
  7. Untuk menggoreng... potong secebis doh lebey kurang tebal 1cm..panjangnya ikut suka (2 keling)..letakkan bersama (like picture above..) lepas tu ditarik baru diletakkan dalam kuali..
  8. Hopefully u all faham ye.. hehe. tak faham bole tanya. Tak pandai nak explain. And hoping that the picture helps.

Roti Lagi...

I love roti.. easy to prepare, good to eat. FAST FOOD better yet it is healthier than the "other" fast food that we have in town.. hehe. [^_^].

I've already posted the recipe not long ago... sweet buns. I've baked it again the other day. But the time I used high protein flour mix with the all purpose flour. The texture is fluffier and smoother. But the taste is the same of course..

This time I made it an extra special because I add a filling into it... Chocolate filling of course!! haha..

Pretty isn't it? hehe

I love how it turned out...

Bed Sharing... What say you?

"Cosleeping (sometimes spelled co-sleeping, and also known as bed sharing or "having a family bed") is the practice of having your infant in your bed with you during sleep. Cosleeping promotes breastfeeding and bonding, and it is safer than crib/cot sleeping when practiced correctly. Cosleeping beyond the breastfeeding years is common in many non-Western cultures, and even in the West many families choose to extend cosleeping through toddlerhood and well into middle childhood."
This is what I can find about bed sharing....
I am in favour of this bed sharing... In fact I'm still share the same bed with my 3++ years old daughter. Well, now not so much since I was planning to train her to sleep in her own room@bed.

As for me, I'm into co-sleeping because I breastfeed my children.. both of them. My  eldest daughter, until she was 2 years old. And my son 10 months old and still being  breastfed.

It is practical, at night I don't have the need to wake entirely wake up to feed the baby. I can do it half awake.. hehe. [^_^]. So it is very convenient during night feedings, since my baby wakes up 2-3 times to feed. And the baby can settled back to sleep quickly.

Snuggling in bed is very good feeling, especially with your baby (and hubby too.. hehe). You are actually bonding with your baby. Co-sleeping improves closeness since it helps the baby feel safe and secure.

I do believe that the bonding is crucial to the baby's physical and emotional development. The feeling is rewarding and satisfying and it's good for the relationship with the child. A happy baby is a healthy baby...[^_^].

What ever your choice is, the most important thing is to do it safely when regards to your offspring.
You will put a risk to your baby if you are:
  • you or your partner smoke
  • you or your partner take drugs, alcohol or any type of sedative medication that causes heavy sleep.
I don't know you all... but I dont think in Malaysin family would have these problems..[^_^]. But we never know, in modern times like now..huhu. Praise to Allah I'm such an old-school parent and I appreciate traditional values. hehe.

Well, you may ask how we do it since there are 4 of us and the kids growing each day... well it is totally up to you, how you are going to do it. As long as it works.. As for me, a couple of months a go it work out great with the 4 of us crammed on the bed (luckily our bed is King size! :). But now the daughter is in training to sleep on own bed. And my husband will sometimes sleep with me or with the daughter whenever he needs the peace and quiet...[^_^]. That is how it works for us. Some family dont share the same bed but share the same room..that can be considered too.. hehe.

Based on a research co-sleeping has 7 benefits:
  1. Babies sleep better
  2. Mothers sleep better
  3. Breastfeeding is easier
  4. It's contemporary parenting
  5. Babies thrive better
  6. Parents and infant become more connected
  7. Reduces the risk of SIDS(Sudden Infant Death Syndrom)
So just ask yourself how it is going to come off for you and practise it. It is worth it! It has more benefit than harm as far as my experience brings me.

Natural Parenting...

Frankly, I never know what Natural Parenting is before. I came across this so called "Natural Parenting" when I'm looking for breastfeeding, cloth diapering, baby wearing and co-sleeping.

This term is famous among US parents...So what is this "Natural Parenting" that people make a fuss about? (not so in Malaysia).

According to this website "natural parenting" is based on a desire to live and parent responsively and consciously. So I asked myself, am I practising this "natural parental"? If you asked me, I would say YES! Perhaps you would have a different principles on how to practice this lifestyle, there are ideals that natural parents tend to hold - even we don't always live up to all of them.

I am a Natural Parent because...
  • I breastfeed both of my kids...
    • The eldest daughter until 2 yrs old
    • The 2nd son until now 10 months and still on breastfeed.
  • I'm bed sharing with my kids...
  • I use baby carrier when we travel..
  • Always try to prepare own baby food...
  • Now trying to use cloth diaper...not 100% yet...
I am trying my best practise natural ways as possible.. Well the 1st and utmost reason is to save money of course...

Just imagine the money that I hve to spend on baby formula...and now I'm in cloth diapering, the money I've spent on disposable diapers? I can save a lot...
Raising a child is a full time job and need a lot of money these days.. well not so much if you live out on natural parenting. That is my sincere and humble opinion la. Maybe other parents out there would disagree I wouldn't know.

So lets go green and follow Natural Parenting! [^_^]

Pizzette Potatoes

This is another recipe of potatoes...
I love this so much! Simple and Sedap! [^_^]
It is basically like the jejari keledek that I've made before basically the same step..
Cut the potatoes thinly, gaul with a dash of oil and bake.. easy peasy!

But this time it has  topping...tomato sauce, saute' onion and a sprinkle of cheese... so yummy I tell you!

but still utterly yummy!



Here is the Recipe:

Ingredient:

  • Potato - 1 ( skin on, thinkly sliced)
  • Oil - 1 tablespoon
  • Tomato sauce
  • Cheddar or Mozarella cheese.

Method:
  1. Pre-heat oven to 200C
  2. Brush each potato slice with oil ans season with a little salt and pepper
  3. Bake for 10mins
  4. Turn the slice over and bake for futher 8-10mins, untill golden and crisp. Watch carefully for the last 2-3 mins.
  5. Top each slice with tomato sauce and scatter over the cheese. bake for further 5-7 mins, untill the cheese has melted.
  6. Ready to serve.

Keledek Jejari

My daughter is very picky eater... She is like that since she was a baby. Last time when she was still minum susu botol she doesn't really take anything else except for the susu. If she does pun it will be a very tiny portion.. 3-4 spoonful each meal and that's it.

I like to try making a variety of meals and snacks for her. A healthy snack that is. Plus now she's not on botol susu anymore she's willing to try new things unlike before. So, from the book "Top 100 Finger Food" by Annabel Karmel I've made these....

Finger Likin' goood! ;)



It is very easy to make...Really! and very tasty too! [^_^]

Ingredients:
  • Sweet potatoes
  • Cooking oil - 1 tablespoon
  • salt - optional
Method:
  1. Preheat the oven to 150C
  2. Use peeler to peel thin strip from the sweet potatoes
  3. Toss the oil, mix well. Spread out in a single layer
  4. Bake for 10 mins then swap the baking sheet round and bake another 5 mins then check and remove from the oven if crisp and browned at the edges.
  5. Otherwise continue cooking for another 4-5mins
  6. Checking every minute, as the crisp can go brown quickly.
p/s: You can also use parsnip for the same method but it  will cook slightly more quickly than the potato.

Kueteow Sempoi

Kueteow goreng is one of my all time favourite dish.. Let it be plain old kueteow goreng or the famous char kueteow...
Here is my version of kueteow goreng.. my family loves it.  Hope you are too. [^_<]


Ingredients:

Kueteow    - segenggam
Cili kering blend  - 2 sudu besar
Oyster sos - 1 sudu besar
Kicap pekat - 1 sudu kecil
Kicap masin - secukup rasa
Daging/ayam/udang - ikut suka
Kucai - ikut suka
Taugeh - ikut suka
Bawang putih - 1 ulas (cincang halus)
Kiub ayam - dijadikan stok

Method:
  1. Tumis bawang putih sehingga naik bau.
  2. Masukkan daging/ayam/. Tumis sehingga kecut.
  3. Masukkan cili blend dan stok ayam sebanyak 5 sudu besar (berkuah).
  4. Biar seketika, baru masukkan sos tiram & kicap pekat.
  5. Apabila kuah menjadi sedikit pekat masukkan kueteow, kucai dan taugeh.
  6. Sambil kacau rata, masukkan kicap masin..
  7. Siap untung dihidang. Enjoy!
p/s: Resepi ni untuk hidangan 1 orang. Tak reti nak goreng byk2, tak sedap. Kalu guna udang...masukkan selepas sos tiram. Tak perlu garam dah cukup masin.

Soft Choc Chip cookie

Dah lama nak buat chocolate Chip cookie. I was looking for the most simple recipe, referring to only whatever I got in my pantry.. hehe
So I came up with this recipe...for those yang try hope you like it as much as I do! ENJOY!
Soft choc. chip cookie recipe:

1 1/4 cups flour
1/2 teaspoon salt
7 tablespoon butter (room temp)
1/4 cup sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
3 tablespoon cream
3/4 cup semi-sweet choc. chip
3/4 cup milk choc. chip

-------------------------------------------------------
 Cara2:


1. preheat oven 175c
2. sift flour, salt & baking powder
3. beat butter + sugars until pale, fluffy
4. add egg + vanilla
5. add flour alternate with cream
6. stir in choc chip
7. cover + freeze for 10mins
8. bake 12-14 mins (depending on your oven)

Cornflakes Madu

You know duirng Hari Raya mesti kena buat biskut raya kan?..  hehe.
When I was little biskut raya yang menjadi kemestian is Biskut cornflakes (not this one) and Biskut Sarang Semut.. Its been... ages dah mama tak buat... the last time I ate Biskut Sarang Semut is,  if I'm not mistaken last year. That one I've made it myself. Obviously, its not the same as our mother's. [^_^]

Now mama dont make biscuits anymore. Tired she said.
"Biscuit is for young people to make. mama old already".. huhu.
But if you asked "nicely" and said will help her to make it... she'll make it. That is my dearest mummy!! Love you so much mama. Ngeeeeee [^_^].

During Hari Raya Aildilfitri, mama will definitely make rendang ayam, Negeri Sembilan's style. And kuah kacang. That is the 2 dishes that mama will make every year. We always celebrate our Hari Raya at Tok's house in Padang Temusu Sg. Petani. So sure enough without saying the 2 dishes she will bring to Tok's house. And abah will order some ketupat daun palas from a dearest friend of his. The ketupat is soooo lembut and sedap unlike any other ketupat I've ever tasted before.

Usually, my sister will make this Cornflakes madu since it is her favourite and it is very easy to prepare. Previously, this cornflakes madu doesnt appeal to me at all just biasa2 ja. But last year, I ate Ikin punya version (adik ipar). It was so tasty! I terus fell in love with. and asked her to teach me to do it. And so she did..in addition my daughter loves it too!! Hooraaayy!! Good for her. Cornflakes + Honey, its a good thing right?! hehe.

Thus, since then I've been making cornflakes madu everytime I feel like eating something sweet and light. Munching away!. [^_^]


For my daughter....

Cornflakes madu monster! nom nom nom...

For Meeeeeeee!! Muahahahahaha! [^_^]


Ingredients:
  • Cornflakes - 1 box
  • Honey
  • Butter - half bar
  • Sugar
Caranya
  1. The butter is melted.
  2. Then add the honey ~ 3-5 tablespoon (according to your liking)
  3. When they mix well add pinch of sugar (according to your liking)
  4. Next, add the cornflakes slow the heat and stir. Turn off the fire
  5. Stir again untill all cornflakes is covered with honey+butter.
  6. Place them in papercup
  7. Bake in the oven ~ 10mins (depend on the oven) untill golden brown. This is stick them togeher.
  8. Oven is 180degree

Ketam Nipah

Ketam oh Ketam....
I don't really like ketam actually... Maybe because nak makan you have to "dig" into its shell and finally when you got there isi macam sikit.. That's how I experienced it whenever I eat ketam.

At home mama always cook ketam bunga. The dish that she usually makes is of course gulai ketam dengan nanas la. And some ketam goreng. I don't really like gulai...not my preferred dish I would say. I ni pemakan sambal. Buatla apa pun sambal, orang Kedah kata masak cabai, ikan, udang, ayam or daging surely I'll clean the plate. hehe [^_^]

Here in Bintulu its very hard to get ketam bunga. Of course this ketam is not always available.. ada musim. But still it is very scarce. Here, the local likes ketam nipah. I never ate this kind of ketam before.... I think... but most definitely I never cooked it before, ever in my life. Undeniably this is the first time.

Kalau ikutkan I ni, I takla pegi carik ketam ni kan.. Tapi my hubby just so teringin nak makan ketam haritu. So, that day kebetulan ada sorang apek jual ketam ni kat pasar tamu Bintulu...hence, dia pun belila..huhu

At first I was OK with it, since I thought how hard is it to cook this "ketam nipah" indeed it would be the same as 'ketam bunga' yang biasa tu... So here goes...I knew that the ketam was still alive, this kind of ketam that is.... I asked my husband to open the plastic bag for me, my heart was pounding so hard when the plastic bag moved.

Eeeekkkk!! the ketam is staring at me!!! takut!! hahahahaha.
Hubby: Kata OK.. no problem.
Me: Memang OK, tapi dia tengah ushar la macam mana nak siang!! macam dia tengah tunggu nak attack ja.. macam mana ni??!!
Hubby: !@#$%^

So with that, I took a picture of it, sent to my mom and asked how to "handle" the ketam. hehe [^_^].
Luckily, mama knew how and text me the details...Its easy actually, you only need to puncture the crab on its belly on top of the triangle..you'll get what I mean when you see the picture. And that's all. It will pengsan or died... then you can clean macam biasa.

So there you have it... how to kill ketam nipah. haha [^_^].
I was kinda scary at first. After that, dah OK.
I cooked the ketam with chilly crab recipe which I forgot already... Got the recipe from the net but I improvised a bit since bahan2 tak cukup. ;)
I'll update later when I remember..
